Ingredients
  

  • 6 pieces yellow or yukon gold potatoes
  • 2 heads medium size heads of broccoli
  • 3 tablespoons extra virgin olive oil
  • 0.25 cup grated Parmigiano
  • 0.75 cups mozzarella cut into small morsels
  • 0.125 cup fine bread crumbs
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 pinch chili powder
  • salt
  • pepper

Instructions
 

Pre-cooking the potatoes and broccoli

  • Firstly, cut the tough part of the stem of broccoli. Then, we want to separate the florets and wash the broccoli.
  • Secondly, peel, wash and cut the potatoes into nice chunks.
  • Bring a pot steamer to boil and place the broccoli in. Steam for about 10 minutes.
  • Remove the broccoli from the steamer and place in a bowl and set aside.
  • Pour some cold water into a pot and throw the potatoes in. Bring to a boil and cook for 10 minutes. Drain, and place the potatoes into another bowl and set aside.

Combining the ingredients

  • Grab a 9 x 14 inch deep baking dish. Drizzle in some of the evo oil and spread it around the bottom and side with a brush.
  • Toss in the steamed broccoli and the boiled potatoes. Give them a bit of a smash with a potato masher.
  • Season with the herbs de provence, salt, pepper, paprika, chili powder, onion and garlic powder. Give the whole thing a good mix.
  • Sprinkle the Parmigiano evenly throughout and place in the morsels of mozzarella. Give the mixture another toss to distribute the ingredients evenly.

Final touches

  • Pre-heat oven to 400°F/200°C.
  • Drizzle more evo oil over the top. Sprinkle the fine breadcrumbs evenly on top.
  • Place in the oven on middle rack and bake for 20 minutes.
  • Lastly, turn on the broiler and roast up the top for 1-2 minutes. Watch it carefully to ensure it does not burn.
  • Take out of oven and serve.

Notes

You could also use cauliflower in place of the broccoli. Leftovers keep in the fridge for a couple of days. If you have leftovers, the best way to re-heat them is to place it in an oven safe dish and heat up in the oven. This will revive the crispness.
