Ingredients
  

For the Bars

  • 1 cup pumpkin puree pure and unsweetened
  • ½ cup unsalted butter melted
  • ¾ cup brown sugar packed tight
  • ¼ cup granulated sugar
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour spooned and leveled
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice

For the Optional Topping

  • ½ cup white chocolate chips melted
  • ¼ teaspoon cinnamon for sprinkling

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking pan.
  • In a mixing bowl, combine the pumpkin puree, melted butter, brown sugar, granulated sugar, egg, and vanilla extract.
  • In another bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 30 minutes or until a toothpick comes out clean.
  • Allow to cool before cutting into bars.
  • For the optional topping, drizzle melted white chocolate and sprinkle cinnamon on top before serving.
