Ingredients
  

  • 1 cup raw pumpkin seeds rinsed and dried
  • 1 tablespoon unsalted butter melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract optional, for extra flavor

Instructions
 

  • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or lightly grease it. Rinse fresh pumpkin seeds to remove pulp, then dry well.
  • In a medium bowl, mix the melted butter with optional vanilla extract. Add the pumpkin seeds and toss well to coat evenly.
  • In a small bowl, combine sugar, ground cinnamon, and salt. Sprinkle over butter-coated seeds and toss again.
  • Spread coated seeds in a single layer on the baking sheet. Roast for 20 to 30 minutes, stirring every 10 minutes.
  • Once seeds are golden brown and crispy, cool on the baking sheet completely before enjoying or storing in an airtight container.
