Ingredients
Cookies
- ½ cup butter softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg room temperature
- 1 large egg yolk room temperature
- 2 teaspoon vanilla
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
- 1¾ cups all-purpose flour
Crumb Topping
- ½ cup flour
- ⅓ cup brown sugar
- 1½ teaspoon cinnamon
- pinch salt
- 4 tablespoon butter soft
Glaze
- 1 cup powdered sugar
- good sprinkle of cinnamon
- 1-2 tablespoon milk
Instructions
Cookie Preparation
- Preheat the oven to 375 F. Line 2 baking sheets with parchment paper.
- Place the butter and sugars in a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, 3 to 4 minutes.
- Add egg, yolk and vanilla, mix until smooth on low speed.
- Slowly mix in baking powder, soda, salt, cornstarch and flour, being careful not to over mix. Stop when flour remnants are visible.
- Scoop the dough into 3 tablespoon size balls and place 6 cookies on cookie sheet. Indent each cookie dough ball.
- Mix together crumb topping ingredients in a small bowl. Add soft butter and mix until it comes together. Place crumb topping in the indention of the cookie dough.
- Bake for 9-12 minutes, or until edges are golden brown. Cool completely before adding glaze.
- Mix together the glaze ingredients. Drizzle over the cooled cookies. Enjoy!
Notes
You can sprinkle the cookies with powdered sugar instead of making the glaze if you prefer. Use kitchen scales for more precise measurements, especially for flour.
