Ingredients
  

Vegetables

  • 2 small shallots diced or 1 large
  • 4-5 cloves garlic finely minced

Condiments

  • 3 Tablespoons vegan butter
  • 2 Tablespoons lemon juice
  • ½ Tablespoon lemon zest zest of 1 lemon

Beans

  • 30 ounces canned butter beans 2 cans with the liquid added

Dairy Substitutes

  • ¼ cup vegan cream cheese

Greens

  • 3 cups spinach

Seasoning

  • 0.5 teaspoon salt to taste
  • 0.5 teaspoon pepper to taste

Instructions
 

Cooking Steps

  • Finely dice the shallots and mince the garlic.
  • Melt the vegan butter in a large pot over medium heat.
  • Add in the shallots and garlic, stir together, and saute for about 3 minutes.
  • Add the two cans of butter beans including the liquid. Bring to a simmer and cook for about 5 minutes.
  • Add the vegan cream cheese, lemon juice, and lemon zest, stir until mixed, and simmer for an additional 2 minutes.
  • Turn off the heat, add the spinach, and stir until wilted. Season with salt & pepper to taste.
  • Serve warm with toasted bread.

Notes

Serve with toasted sourdough bread. Best enjoyed immediately but can be stored in the fridge for 3-4 days or frozen for 1 month. Reheat to enjoy.
