Ingredients
  

  • 1 tablespoon olive oil
  • 1 leek, chopped
  • 3 cloves garlic, minced
  • ¼ cup white wine
  • 4 cups broth
  • 4 cups chopped yellow potatoes
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 ½ cups frozen peas
  • ½ cup cream
  • 1 tablespoon soy sauce
  • ¼ cup chopped fresh dill

Instructions
 

  • Add the olive oil to a soup pot and bring the heat to medium-high.
  • Once the pot is hot, add the leeks and garlic. Cook for 3 minutes, stirring constantly.
  • Add the wine and cook for 3 minutes.
  • Add the broth, potatoes, salt, and pepper. Bring to a boil, then lower the heat to medium and cook for 25 minutes or until the potatoes are tender.
  • Remove the pot from the heat and mash some of the potatoes to thicken the soup.
  • Add the peas, cream, and soy sauce, and simmer for 10 minutes.
  • Top with fresh dill and serve.
