Ingredients
  

Pasta

  • 150 g fresh pasta per person, or 100g dried
  • 50 g parmesan finely grated

Sauce Ingredients

  • 2 whole heads garlic roasted
  • 2 tablespoon olive oil for roasting garlic
  • 30 g butter cubed
  • ½ teaspoon pepper
  • 1 cup cream single or heavy
  • 2 - 3 tablespoon freshly squeezed lemon juice
  • Zest of 1 lemon extra zest to serve
  • dried paprika flakes optional for serving

Instructions
 

Cooking Instructions

  • Preheat your oven to 200°C (400°F).
  • Prepare your garlic bulbs, cut the tops off, and drizzle with olive oil. Wrap in foil and roast for about 45 minutes until soft.
  • Allow the garlic to cool, then squeeze out the cloves into a smooth paste.
  • Cook pasta in a pot of well-salted boiling water until al dente.
  • Melt butter in a frying pan over medium heat, add pepper and stir.
  • Add garlic paste and whisk in, then add cream and lower the heat to a gentle simmer.
  • Add lemon juice and zest, whisk again.
  • Slowly add parmesan in batches, whisking until melted.
  • Let it simmer for a couple of minutes until slightly thickened.
  • Add cooked pasta with a ¼ cup of pasta water, let it bubble for a minute.
  • Adjust sauce consistency with more pasta water as needed, then serve topped with extra lemon zest and paprika flakes.

Notes

Adjust the amount of lemon and garlic to your taste. You can add more lemon juice if you like a stronger flavor. This sauce is enough for three portions of pasta, or adjust for larger servings.
