Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • to taste Kosher salt
  • to taste pepper
  • cup bourbon or whiskey, apple juice, or chicken broth
  • ¾ cup brown sugar
  • ¾ cup soy sauce
  • 2 cloves garlic minced
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water

Instructions
 

  • Season the chicken thighs with kosher salt and pepper on both sides and place them in the bottom of the crockpot.
  • In a medium bowl, combine bourbon, brown sugar, soy sauce, and minced garlic. Stir well to combine and pour over the chicken in the crockpot.
  • Cover with the lid and cook on low for 4 hours or high for 3 hours.
  • In a small bowl, whisk together the cornstarch and cold water to create a slurry. Whisk the slurry into the sauce 30 minutes before the chicken is done cooking to thicken the sauce.
  • Serve the chicken over rice and garnish with green onions.
