Crockpot Bourbon Chicken

- 2 pounds boneless skinless chicken thighs
- to taste Kosher salt
- to taste pepper
- ⅓ cup bourbon or whiskey, apple juice, or chicken broth
- ¾ cup brown sugar
- ¾ cup soy sauce
- 2 cloves garlic minced
- 2 tablespoons cornstarch
- 3 tablespoons cold water
Season the chicken thighs with kosher salt and pepper on both sides and place them in the bottom of the crockpot.
In a medium bowl, combine bourbon, brown sugar, soy sauce, and minced garlic. Stir well to combine and pour over the chicken in the crockpot.
Cover with the lid and cook on low for 4 hours or high for 3 hours.
In a small bowl, whisk together the cornstarch and cold water to create a slurry. Whisk the slurry into the sauce 30 minutes before the chicken is done cooking to thicken the sauce.
Serve the chicken over rice and garnish with green onions.
