Grilled Chicken
- 300 g chicken tenders or chicken breast
- 0.75 teaspoon salt or to taste
- 0.5 teaspoon pepper
- 0.5 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning or use a mixture of oregano and parsley
- 1 tablespoon olive oil
Spinach Alfredo Sauce
- 3 tablespoon unsalted butter
- 0.25 medium onion finely chopped
- 0.5 tablespoon minced garlic
- 0.5 teaspoon salt or to taste
- 0.25 teaspoon pepper
- 0.5 teaspoon chili flakes
- 0.5 teaspoon Italian seasoning
- 2 tablespoon all purpose flour
- 1.25 cups whole milk
- 0.5 cup heavy cream any kind of plain cream
- 0.5 cup grated Parmesan cheese freshly grated for best results
- 1 cup chopped spinach
Assembly
- 2 packs King's Hawaiian original Hawaiian sweet rolls 24 rolls; do not separate
- 3-4 cups shredded mozzarella cheese
- 0.25 red onion thinly sliced
Grilled Chicken
Coat the chicken tenders in the seasonings and olive oil.
Heat a pan on medium-high heat.
Cook the chicken tenders until they are cooked through and lightly seared on both sides, about 4 minutes per side.
Rest the tenders on a chopping board for 5 minutes, then chop them into cubes and toss them on the chopping board to pick up all the juices. Set aside.
Spinach Alfredo Sauce
Melt the butter in a non-stick pan over medium-high heat.
Add the chopped onion and sauté until it softens, about 3-5 minutes.
Add the garlic and spices, and cook for 1-2 minutes until fragrant.
Add the flour and toast it for a minute.
Add the milk and cream. Turn the heat to low, and cook the sauce for a few minutes while stirring until it thickens up.
Turn off the heat, and stir in the spinach and parmesan cheese. Taste and adjust as needed.
Assembly
Pre-heat your oven to 350F and line 2 large baking sheets with parchment paper.
Divide each sheet of rolls into 2 halves, so you have 4 'flatbread' sheets. Place them on the baking sheets.
Bake the bread for about 8 minutes until it becomes toasted and lightly golden. Remove from the oven.
Spread the spinach alfredo sauce on top of the toasted bread.
Sprinkle over half of the shredded mozzarella cheese, distribute the cubed grilled chicken, then top off with the remaining shredded mozzarella cheese and thinly sliced onion.
Turn your oven to the broil/grill setting (500F with top grill). Place the assembled bread in the oven for broil for 5-8 minutes until the cheese on top is melted and golden.
Slice up, serve and enjoy!
