Ingredients
  

Rice and Vegetables

  • ¾ cup uncooked rice jasmine rice preferred
  • 1 tablespoon olive oil
  • ½ medium onion chopped
  • 1.5 pounds lean ground beef
  • 3 cloves garlic minced
  • 1 red bell pepper chopped finely
  • 1 green bell pepper chopped finely
  • 1 can tomato sauce 13.5 fluid ounce
  • 1 can fire-roasted diced tomatoes 28 fluid ounce
  • 4 cups chicken broth
  • ¼ teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt & pepper to taste

Cooking Instructions

  • Cook the rice according to package directions. If using pre-cooked rice, set aside.
  • In a large soup pot, heat olive oil and sauté onions for 5-7 minutes. Chop peppers while onions are cooking.
  • Add ground beef to the pot and cook for 5 minutes, stirring to break up the beef.
  • Stir in the minced garlic and cook for about a minute.
  • Add red and green peppers, tomato sauce, diced tomatoes, chicken broth, Italian seasoning, and paprika. Bring to a gentle boil.
  • Once boiling, reduce heat and let simmer for 15 minutes.
  • Add cooked rice and simmer for another 10 minutes, adjusting seasoning with salt and pepper.

Notes

For best flavor, use fire-roasted diced tomatoes. You can freeze the soup without adding rice, and it can be made in a slow cooker.
