Dry Ingredients
- 2.5 cups all-purpose flour (cake flour also works)
- 1 tablespoon baking powder
- 0.5 teaspoon baking soda (bicarbonate of soda)
- 0.5 cup sugar (heaped)
- 0.5 teaspoon salt
Wet Ingredients
- 2 large eggs (lightly beaten)
- 0.67 cups oil (canola or light olive oil)
- 1 cup Greek yogurt (authentic preferred)
- 0.25 cup milk (¼ to ½ cup, adjust if necessary)
Toppings
- extra sugar (for sprinkling, optional)
Baking Instructions
Preheat the oven to 375F/190C (400F/205C for conventional ovens).
Combine the flour, baking powder, baking soda, sugar, and salt in a large bowl.
Combine the eggs, oil, yogurt, and milk in another bowl or jug.
Add the wet ingredients to the dry. Stir until just combined. Fold in the blueberries. Add more milk if necessary.
Spoon the batter into muffin cases in muffin pans, almost to the top. Sprinkle with extra sugar if desired, then bake for 17 to 20 minutes until risen and golden.
Cool on a wire rack, then store in an airtight container.
