Ingredients

  • ½ cup Greek yogurt plain
  • cup peanut butter creamy
  • ¼ cup honey or maple syrup
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup oat flour or old-fashioned oats blended into flour
  • ¼ cup chocolate chips
  • ½ teaspoon baking powder
  • 1 pinch salt

Cooking Instructions

  • Preheat oven to 350°F and line muffin tin with papers or grease with coconut oil spray.
  • Whisk together Greek yogurt, peanut butter, honey or maple syrup, egg, and vanilla until smooth.
  • Gently stir in oat flour, baking powder, and salt until just combined, then fold in chocolate chips.
  • Fill muffin cups about ¾ full and bake for 18-22 minutes until golden and a toothpick comes out with moist crumbs.

Notes

Use room temperature ingredients for easier mixing and avoid overmixing to prevent tough muffins.
