Ingredients
  

Meat

  • 1 package ground pork breakfast sausage 16 ounce

Dairy

  • 8 large eggs
  • 1.25 cups milk
  • ½ cup shredded Cheddar cheese

Canned Goods

  • 1 can condensed cream of mushroom soup 10.50 ounce
  • 1 can sliced mushrooms 4.5 ounce, drained

Frozen

  • 1 package frozen potato rounds 32 ounce

Preparation

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Cook sausage in a skillet over medium-high heat until evenly browned. Drain and set aside.
  • Beat eggs, soup, and milk together in a large bowl. Stir in sausage and mushrooms. Add to the prepared baking dish. Stir in frozen potato rounds.
  • Bake in the preheated oven until heated through, 45 to 50 minutes. Sprinkle with cheese, and bake until cheese melts, 10 minutes more.

Notes

This dish can be made a day in advance for convenience.
