Ingredients
  

  • 3 pounds salmon cut in half
  • 1 14-ounce can pineapple tidbits or pineapple rings cut into smaller pieces; reserve some for topping
  • ¼ cup pineapple juice
  • 2 tablespoons melted unsalted butter or ghee
  • 2 tablespoons sesame oil
  • 1 tablespoon lemon juice
  • 1 tablespoon light brown sugar plus an additional ½ cup if caramelizing
  • 1 ½ tablespoons honey
  • 1-2 large garlic cloves minced
  • 1 small onion diced; optional
  • 3-4 units fresh mint leaves chopped, for garnish (or herb of choice)
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • teaspoon white pepper
  • 2 tablespoons unsalted butter for caramelizing optional topping

Instructions
 

  • Preheat oven to 400° F.
  • Remove the salmon from the packaging and pat dry with paper towels. Cut the salmon into two even pieces.
  • Cover the bottom of a large sheet pan with aluminum foil or parchment paper.
  • Place pineapple tidbits or rings on top of the foil in rows of 2, then place the salmon on top of the pineapple.
  • Chop the remaining pineapple and add to a small bowl.
  • Add all marinade ingredients to the pineapple in the bowl. Mix well.
  • Spread the marinade over the salmon, ensuring it covers the entire surface. Allow to marinate for 15 to 30 minutes in the fridge.
  • Place the sheet pan with salmon in the oven and bake for 25-30 minutes until cooked through (145 ° F).
  • Remove the salmon from the oven and let it rest for 10 minutes.
  • Garnish with fresh mint, if desired, and serve.

Notes

For caramelizing the pineapple topping, cook pineapple tidbits, butter, and brown sugar in a skillet on medium heat until caramelized, about 10-15 minutes. Use the mixture as a topping for the salmon if desired.
