Sauce Ingredients

  • 6 pieces Tomatoes
  • 1 bunch Fresh cilantro
  • 1 piece Onion
  • 1 piece Garlic clove
  • 1 piece Green chili
  • 4 pinches Fine salt
  • 6 pieces Slices of Chorizo

Main Ingredients

  • 4 pieces Eggs
  • 40 g Feta cheese
  • 1 piece Avocado
  • 100 g Canned red beans
  • 1 piece Greek yogurt
  • 4 pieces Corn tortillas

Instructions
 

Sauce Preparation

  • Grate the tomatoes. Peel and chop the onion, peel the garlic, and remove the seeds from the chili. Wash and chop the cilantro. Blend everything, adding salt. Heat olive oil in a pan and pour in the sauce, reducing slightly. Heat the chorizo slices and add them to the sauce. Keep warm.

Bean and Tortilla Preparation

  • Heat the canned red beans in a little olive oil in the pan, and mash them roughly. Peel and cube the avocado. Heat the tortillas in the pan with olive oil until golden. Keep aside. Crumble the feta cheese.

Egg Cooking

  • Cook the eggs sunny-side up one by one in olive oil. Salt the pan before placing the egg in it. Keep the cooked eggs aside.
