Ingredients
  

Potatoes and Broth

  • 6 medium russet potatoes peeled and diced
  • 1 medium onion chopped
  • 4 cups chicken broth or vegetable broth for vegetarian option

  • 1 cup heavy cream

Fats

  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour

Cheese and Garnish

  • 1.5 cups shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 0.5 cup sour cream
  • 0.5 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 0.25 cup chopped green onions for garnish

Cooking Instructions

  • Place the diced potatoes and chopped onion in a large pot. Add the chicken broth and bring to a boil. Reduce heat and simmer until the potatoes are soft, about 15–20 minutes.
  • In a small saucepan, melt the butter over medium heat. Whisk in the flour until it forms a smooth paste. Cook for 1–2 minutes, then slowly add the milk while whisking constantly until it thickens.
  • Pour the milk mixture into the potato pot. Stir in the heavy cream, garlic powder, salt, and pepper. Use a potato masher to gently mash some of the potatoes for a thicker texture while leaving chunks for bite.
  • Stir in the shredded cheddar cheese and sour cream until smooth and creamy. Taste and adjust seasoning if needed.
  • Ladle soup into bowls and top with crumbled bacon, extra cheese, green onions, and even a dollop of sour cream if you’d like.

Notes

Use starchy potatoes to create a naturally creamy base. Don’t skip the roux for a silky texture. Blend partly for creaminess, taste and adjust seasoning well before serving. Stir in cheese off the heat to avoid graininess.
