  • 1 large eggplant sliced into rounds
  • 1 cup pizza sauce low carb variety
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup pepperoni sliced
  • 1 teaspoon Italian seasoning

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice the eggplant into rounds and place on a baking sheet.
  • Sprinkle salt on the eggplant slices and let sit for 15 minutes to draw out moisture.
  • Rinse and pat dry with paper towels.
  • Spread pizza sauce on each eggplant slice.
  • Top with mozzarella cheese and pepperoni. Sprinkle Italian seasoning on top.
  • Bake in the preheated oven for 20 minutes or until cheese is melted and bubbly.
  • Remove from oven and let cool slightly before serving.
