Ingredients
  

Pie Crust

  • 2 crusts Homemade Pie Crust or All Butter Pie Crust

Apple Filling

  • 10 cups apple slices (about 8 large peeled and cored apples)
  • 0.5 cup granulated sugar (or packed brown sugar)
  • 0.25 cup all-purpose flour (spooned & leveled)
  • 1 Tablespoon lemon juice
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground nutmeg
  • 1 large egg egg wash beaten with 1 Tablespoon milk
  • 1 Tablespoon coarse sugar for sprinkling on crust (optional)

Instructions
 

Preparing the Pie

  • Prepare either pie crust recipe through step 5 and refrigerate for at least 2 hours before using.
  • Roll out one of the discs of chilled dough to a 12-inch circle and place in a 9-inch pie dish. Refrigerate while preparing the filling.
  • In a large bowl, stir together the apple slices, sugar, flour, lemon juice, cinnamon, allspice, and nutmeg.
  • Optional: Pre-cook the apple filling in a skillet over medium heat for about 5 minutes to soften the apples.
  • Preheat oven to 400°F (204°C).
  • Spoon the filling into the prepared crust, piling the apples high.
  • Roll out the second disc of chilled dough to a 12-inch circle and cut into strips. Weave the strips over the filling to create a lattice top.
  • Brush the top with egg wash and sprinkle with coarse sugar if desired. Optionally refrigerate for 20-30 minutes.
  • Bake on the middle rack for 25 minutes; reduce temperature to 375°F (190°C) and continue baking for 35-45 more minutes.
  • Remove from the oven, let cool for at least 3 hours before slicing and serving.
  • Cover and store leftover pie at room temperature for up to 1 day or in the refrigerator for up to 5 days.

Notes

Make ahead by preparing the pie crust dough 5 days in advance or freezing baked pie for up to 3 months. Apples used typically include Granny Smith and Honeycrisp.
