Ingredients
  

For the Pumpkin Bars

  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 15 oz can pumpkin puree
  • 2 cups all-purpose flour
  • 2 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg

For the Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 0.5 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Preparation

  • Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  • In a large bowl, beat together sugars and oil until well combined. Add eggs one at a time, mixing thoroughly after each addition. Stir in pumpkin puree.
  • In a separate bowl, whisk together the flour, baking powder, cinnamon, baking soda, salt, ginger, cloves, and nutmeg. Gradually add the dry ingredients to the wet mixture, mixing until fully combined.
  • Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • While the bars cool, prepare the frosting. Beat the softened cream cheese and butter until smooth. Add powdered sugar and vanilla extract, mixing until fluffy and well combined.
  • Once the bars are completely cooled, spread the cream cheese frosting evenly over the top. Cut into squares and serve.

Notes

Canned pumpkin puree is recommended for convenience and consistent texture, but homemade puree can be used if preferred. Feel free to adjust the spices or add mix-ins like nuts or chocolate chips.
