Fruits

  • 3 medium mashed bananas about 3 medium or 2 large ripe bananas

Nut Butters

  • ½ cup peanut butter creamy or crunchy

Sugars

  • ¼ cup coconut sugar or brown sugar

Fruits and Vegetables

  • ¼ cup unsweetened applesauce

Dairy Alternatives

  • ½ cup almond milk or any nondairy milk

Oats and Grains

  • 2.5 cups old-fashioned oats or quick oats (not instant)

Baking Essentials

  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract

Chocolate

  • 1 cup semi-sweet chocolate chips use dairy free for vegan

Instructions
 

Baking Instructions

  • Preheat oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper, leaving an overhang on the sides.
  • In a large bowl, mash the bananas. Beat or whisk in the remaining ingredients in order. The batter will be thick but pourable.
  • Pour the mixture evenly into the prepared pan and bake for 25-28 minutes or until the center is set.
  • Remove from the oven and cool in the pan at room temperature for 30-60 minutes. Refrigerate for 1 hour until chilled.
  • Remove bars from the pan using the overhang and cut into bars. Optionally drizzle melted peanut butter over each.
  • Cover leftover bars and store in the refrigerator for up to 10 days.

Notes

Freeze squares in single layers for up to 3 months. Use any nut butter and ensure oats are gluten-free for dietary needs.
