Ingredients
  

Pretzel Chicken

  • 2 pieces boneless, skinless chicken breasts about 8-10 oz each
  • 4 oz salted pretzels
  • ¼ cup flour
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt
  • Pepper
  • 1 piece egg
  • Neutral oil for frying
  • Fresh parsley for serving

Sauce

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk
  • 1 tablespoon Dijon mustard
  • 8 oz cheddar cheese shredded

Instructions
 

Preparation

  • Butterfly each of the chicken breasts, making 4 thinner pieces of chicken. Place the chicken between plastic wrap and flatten with a mallet.
  • Process the pretzels in a food processor until you have crumbs.
  • In a shallow dish, combine the flour, garlic powder, onion powder, salt, and pepper.
  • Whisk the egg in another dish.
  • Place the crushed pretzel in a third dish.
  • Preheat the oven to the lowest setting.
  • Heat about ½” of oil in a skillet until it reaches 350ºF.

Cooking

  • Dip each piece of chicken into the flour mixture, then egg, and finally pretzels, pressing crumbs onto the chicken.
  • Fry chicken in hot oil in batches for about 3-4 minutes per side until cooked through. Remove to a cooling rack.
  • For the sauce, melt butter, whisk in flour, add milk and mustard, then cheese until melted. Season with salt and pepper.
  • Serve the chicken topped with the mustard cheddar sauce and minced parsley.

Notes

The sauce doesn’t get super thick, so be careful to not cook it too long to avoid graininess.
