Ingredients
  

For the steak

  • 1.5-2 lbs skirt steak though you can substitute with your favorite cut of steak
  • 1.5 teaspoon Kosher salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoon neutral oil such as grapeseed, canola, or avocado oil

For serving

  • 1 cup cilantro chimichurri see recipe
  • 2-3 cups cooked white rice
  • fresh cilantro Optional, but recommended
  • flaky sea salt Optional, but recommended
  • pickled red onions Optional, but recommended
  • lime wedges Optional, but recommended

Cooking Instructions

  • Pat the steak dry with a paper towel, then season generously with Kosher salt and black pepper on all sides. Allow the steak to sit at room temperature for at least 15 minutes before cooking.
  • Make the chimichurri sauce if you haven't already.
  • Heat a large cast-iron skillet over high heat for about 5 minutes, until very hot. Add neutral oil, then carefully add the seasoned steak to the skillet. Cook for 2-3 minutes per side, or until an internal temperature of 125-130°F is reached.
  • Allow the steak to rest for 5-10 minutes before slicing thinly across the grain.
  • Divide rice evenly between bowls, then top each with sliced skirt steak. Spoon chimichurri sauce on top and sprinkle with flaky sea salt. Serve with pickled red onions, additional cilantro, and lime wedges if desired.

Notes
