Ingredients
  

Fresh Ingredients

  • 4 cups fresh baby spinach chopped
  • 0.5 lb ditalini pasta cooked, rinsed and cooled
  • 6 oz Feta Crumbles I use athenos
  • 2 jars Marinated Artichoke Hearts drained and trimmed
  • 0.5 cup Roasted Red Peppers finely diced
  • 0.5 cup red onion finely diced
  • 0.5 cup Banana Peppers finely diced

Dressings and Seasonings

  • 0.33 cup Garlic Expressions Salad Dressing or another garlicky italian style dressing
  • 2 tablespoon White Balsamic Vinegar
  • 2 tablespoon mayo
  • 1 pinch salt

Instructions
 

Preparation

  • In a large bowl, combine the cooked ditalini pasta and chopped spinach.
  • Add in artichoke hearts, feta crumbles, roasted red peppers, red onion, and banana peppers.
  • In a separate bowl, whisk together the salad dressing, white balsamic vinegar, mayo, and salt.
  • Pour the dressing over the pasta salad and toss until everything is evenly coated.
  • Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

This salad is best enjoyed cold and can be made ahead of time for convenience.
