  • 1 pound pasta your choice of shape
  • 2 cups cooked corn kernels
  • 1 red bell pepper diced
  • 0.5 red onion finely chopped
  • 1 jalapeno pepper seeded and minced
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 0.25 cup freshly chopped cilantro
  • 1 lime juice of
  • 1 teaspoon chili powder
  • salt to taste

Preparation Steps

  • Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and rinse under cold water to stop cooking.
  • In a small bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  • In a large mixing bowl, combine cooked pasta, corn, red bell pepper, red onion, and jalapeno. Pour dressing over and toss gently.
  • Sprinkle freshly chopped cilantro over the salad and toss again. Adjust seasoning if needed.
  • Refrigerate for at least 30 minutes before serving to allow flavors to meld.
