Ingredients
  

Fruits

  • 4 large peaches ripe; yellow or Elberta
  • 1 cup strawberries hulled and halved
  • 0.5 cup blueberries fresh or frozen
  • 0.5 cup red grapes halved
  • 2-3 tablespoon fresh mint leaves finely chopped

Dressings & Extras

  • 1-2 tablespoon honey or maple syrup optional
  • 1 tablespoon lime or lemon juice prevents browning

Preparation

  • Wash all produce thoroughly. Slice the peaches into thin wedges, hull and halve the strawberries, halve the grapes, and keep blueberries whole.
  • In a small bowl, whisk together the lime (or lemon) juice with honey or maple syrup. Adjust sweetness to taste.
  • Place the peaches, strawberries, blueberries, and grapes in a large mixing bowl. Drizzle the citrus glaze over the fruit.
  • Gently mix the salad with a rubber spatula or clean hands. Be careful not to mash the fruit.
  • Stir in the chopped fresh mint. Cover and refrigerate for at least 30 minutes.
  • Transfer to a serving bowl or divide into individual jars. Garnish with extra mint or lime zest.

Notes

This salad is best when enjoyed fresh. Can be customized with additional fruits or toppings as desired.
