Equipment

  • mixing bowls
  • Measuring Cups and Spoons
  • Knife and Cutting Board
  • Large Skillet or Wok
  • Tongs or Spatula
  • Serving Platter

Ingredients

  • 1.5 to 2 pounds Boneless Skinless Chicken Breasts Tender and easy to cook
  • 1 cup Sweet Chili Sauce Store-bought or homemade adds sweetness and heat
  • 2 tablespoons Soy Sauce For a savory depth of flavor
  • 4 cloves Garlic Minced for aromatic flavor
  • 1 tablespoon Ginger Minced adds warmth and spiciness
  • 2 tablespoons Vegetable Oil For cooking
  • ¼ cup Cornstarch For coating the chicken to achieve a crispy texture
  • Salt and Pepper To taste for seasoning
  • 2 Green Onions Sliced for garnish and a fresh flavor
  • 1 tablespoon Sesame Seeds For garnish and a nutty crunch
  • Rice or Noodles For serving (jasmine or basmati rice, or noodles of your choice)

Instructions

Preparation

  • Begin by cutting the chicken breasts into bite-sized pieces. In a mixing bowl, combine the sweet chili sauce, soy sauce, minced garlic, and minced ginger. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Coating the Chicken

  • In another bowl, place the cornstarch and season it lightly with salt and pepper. Remove the marinated chicken from the refrigerator and dredge each piece in the cornstarch.

Cooking the Chicken

  • In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the coated chicken pieces in a single layer. Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Glazing the Chicken

  • In the same skillet, reduce heat to medium and add the remaining marinade. Bring to a simmer to thicken. Add the fried chicken back in, tossing until well coated and cooking for an additional 2-3 minutes.
  • Taste the glaze and adjust seasoning if needed.

Serving

  • Transfer the glazed chicken to a serving platter, garnish with green onions and sesame seeds, and serve with rice or noodles.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Can also be frozen for up to 2 months.
