Ingredients
  

For the soup base

  • 2 tablespoon extra-virgin olive oil
  • 1 large sweet onion sliced ½ inch thick
  • 4 cloves garlic finely chopped
  • 1 teaspoon sea salt or pink salt
  • ½ teaspoon black pepper freshly cracked
  • 2 cups whole shiitake mushrooms
  • 2 cups baby bella or cremini mushrooms sliced
  • 4 cups organic chicken broth or vegetable broth (gluten-free)
  • 2 cups kale leaves loosely chopped

For finishing

  • ½ cup coconut milk or coconut cream

Instructions

  • Heat the olive oil in a large pot over medium heat, add sweet onion slices, and caramelize for 10-15 minutes until golden-brown.
  • Add garlic, sea salt, and black pepper to the onions, sauté for 1-2 minutes until fragrant.
  • Stir in shiitake and baby bella mushrooms, cook for 5-7 minutes until mushrooms release liquid and start browning.
  • Pour in the chicken or vegetable broth, stir to combine, and add the kale. Simmer on low for 20 minutes.
  • Stir in coconut milk, let warm for 1-2 minutes, and adjust seasoning as necessary before serving.

Notes

For added spice, consider stirring in red pepper flakes with the coconut milk.
