  • 1.5 pounds yuca, peeled and cut into 1-inch chunks
  • 1 to 2 large red onions, thinly sliced
  • ¼ cup freshly squeezed orange juice (from about half an orange)
  • ¼ cup freshly squeezed lime juice (from 2 limes)
  • 1 tablespoon coarsely chopped cilantro
  • 6 cloves garlic, minced
  • ¼ cup olive oil
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground cumin
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Preparation Steps

  • Gather the ingredients.
  • Boil yuca in salted water until tender, about 30 minutes.
  • Drain yuca and place it in a serving dish. Keep warm by covering the bowl.
  • Combine sliced onions, orange juice, lime juice, chopped cilantro, and minced garlic in a bowl. Pour the mixture over yuca.
  • Heat olive oil, oregano, cumin, salt, and pepper in a heavy pan until hot. Pour the hot oil over yuca and garnish with additional cilantro leaves and orange zest, as desired.
